Poached fish dinner with mustard-dill sauce

Ingredients:
4 medium size thin-skinned boiling potatoes, cut in ¼ inch slices
(about3 cups)
2 medium carrots cut into 1/4-inch rounds (about 1 cup)
2 medium zucchini, cut into 1/4-inch rounds (about 2 cups)
3 cups water
3 tablespoons lemon juice
1-inch strip lemon peel
2 slices onion
4 sprigs parsley
1 bay leaf
3/4 pound halibut or salmon filets (1-inch thick)
1 cup Mustard-Dill Sauce
Directions:
1. Steam potatoes and carrots for 15 minutes; add zucchini and steam for additional 10 minutes or until
desired texture is reached.
2. Bring poaching ingredients (water, lemon juice, lemon peel, onion, parsley, and bay leaf) to boil in a broad
shallow pan or skillet. Simmer 5-10 minutes to extract flavor from seasoning.
3. Add fish. Simmer, partially covered, 10 minutes, or until fish flakes with a fork.
4. Remove fish with a slotted spatula and drain. Place on serving plate, surround with potatoes and vegetables.
5. Spoon Mustard-Dill Sauce over all, serve any remaining sauce on the side,
